~ Coconut Milk Cupcakes with Cream Cheese Frosting~


 Simple.  Delicious.  Enjoy.


COCONUT MILK CUPCAKES WITH CREAM CHEESE FROSTING
INA GARTEN'S (adapted)


~ 3 sticks unsalted butter
~5 eggs room temp
~1 1/2 tsp vanilla
~1 1/2 tsp almond extract
~3 cups flour
~1 tsp baking powder
~1 tsp baking soda
~1/2 tsp salt
~ 1 cup coconut milk

-cream butter and sugar until light and fluffy.  add eggs one at a time with extracts.  combine dry ing separately and add to cream mixture alternately with coco milk in 1/3's, beginning and ending with dry. (DO NOT OVERBEAT)
Bake in pre heat oven at 325 for approx 20-25 min.  {around 30 cupcakes}

~2 8oz cream cheese
~3 sticks butter
~1 tsp vanilla
~1 tsp almond
~ 1 1/2 LB. powdered sugar

-cream till light and fluffy.
