~Pumpkin Cupcakes with Salted Caramel Frosting~


Bring something different to Thanksgiving dinner this year!  Everyone loves a cupcake (Anthony Bourdain excepted).
Yours will be the dessert they'll talk about for years to come ;-} !


PUMPKIN CUPCAKES with SALTED CARAMEL FROSTING

~1 stick of butter
~1 1/3 cup sugar
~1/2 cup pumpkin puree
~2 eggs
~1 tsp vanilla

~1 cup self rising flour
~1 cup flour
~1/2 tsp salt
~1 tsp pumpkin pie spice

~1/2 cup milk

Mix sugar and butter until light and fluffy.  Add eggs one at a time.  Add puree and vanilla, mix until just incorporated.
Mix dry ing in separate bowl.
Alternate dry and milk, beginning and ending with dry.  DO NOT OVER MIX AT THIS POINT!
Bake at 350 for 20-25 min.

~1/4 cup sugar
~2 Tbsp water
~1/4 cup half n half
~1 tsp vanilla

~2 sticks butter
~2 cups powdered sugar
~1/2 to 1 tsp sea salt

Cook sugar and water in saucepan on med high until starts to turn amber in color. (Do not stir, if need to, swirl in pan by lifting from side to side.  Be careful to take off heat the moment it starts to turn amber colored so it does not burn).  Add cream and vanilla.  Whisk until smooth, on heat if need be to melt clumps.  Let cool for 20 min.

Cream butter, sugar, salt and caramel until consistency you want.  Top with sprinkled raw sugar and if desired, Pumpkin Spice Kisses you can purchase HERE !
